I am looking for some off road tyres, and the grabber AT2 is supposed to be good.

Generally I believe you can oversize width by up to 20mm without a problem.

Having said that, the profile height (60) is a percentage so I would have thought that would need to change too - 55 seems like a better choice for 255/18.

I spoke to LR about this last week as mine is still under warranty. The result was what I expected - they don't approve that size and if there were any warranty claims it could be a problem.

I would be interested to know how you get on with the General Grabbers.

Good point on insurance, meant to say that. Although last time I phoned and told them about various tyre options and what I was planning it got completely dismissed.
