For unbelievably tender meat consider Sous Vide - not a cheap investment, and some might think it too fancy or too much trouble, but produces the most amazing results. Very good for cheap cuts - flank, short rib etc - but also produces the best pork belly I've ever tasted. Can be used for veg as well, we do beetroot and such like. Also good for keeping fruit whole for crumbles, tarts etc.

Going to do chicken at the weekend, simple whole chicken rested on a couple of carrots and a onion and cooked for 10 hours |
